Father’s Day is coming up this Sunday, and as per usual, we’ve been feeling pretty stumped about what to get the old man this year. A book feels like the easy way out, socks are a serious cliché, and we wouldn’t know the first thing about what’s useful from a hardware store. Sometimes, simple is best, and they do say that the way to a man’s heart is through his stomach. With this in mind, we’ve thrown together some super easy, not to mention affordable five ingredient roasts. Rustic meals you can pull together within minutes, before leaving the oven to do all the hard work for you. Why not have your Pa over for lunch this Father’s Day – he’ll probably appreciate some great nosh far more than a paperback with a predictable plot-line.

Perfect Crackling Roast Pork with Home Made Apple Sauce

WHAT YOU’LL NEED

Roasting loin of good quality pork (200-300g pp, ask your butcher to score it for you) | Baby potatoes (approx. 4 pp) | Green beans (small handful pp) | Red apple (1/2 an apple pp| Garlic

WHAT TO DO

  1. Pre heat your oven to 220 degrees Celsius.
  2. Pat the pork with paper towel to remove moisture, before drying out the skin with your blow dryer (yes, you read correctly).
  3. Mix a small amount of vinegar (olive oil burns easily, vinegar will not) with a few pinches of salt and rub the mixture all over the pork, massaging it into the scoring.
  4. Give the pork another blast with your hairdryer, before adding a final sprinkling of salt.
  5. Quarter the potatoes and score them vertically for extra crunch, before tossing them in olive oil, salt, pepper and thyme.
  6.  Quarter the apple, and half crush your garlic cloves, skin on.
  7. Place the pork, potatoes, broken garlic cloves and apple in a roasting tray and cook on high for the first 20 minutes, lowering the temperature after your crackling begins to form.
  8. Roast for approximately 45 minutes, check on the meat before removing from the oven.
  9. Lightly boil the green beans to serve, smooshing the caramelised apple with a fork will create instant, homemade apple sauce!

Roast Lamb Chops with Sweet Potato Chips

WHAT YOU’LL NEED

Good quality lamb chops (approx. 4 pp) | Sweet potato (1/2 pp) | Broccoli | Red onion (1/2 pp) | Garlic

WHAT TO DO

  1. Pre heat your oven to 180 degrees Celsius.
  2. Mix crushed garlic, rosemary, salt and pepper together and rub all over the lamb.
  3. Cut the sweet potato, skin on, in to slim long chips, season with salt, pepper, rosemary and olive oil.
  4. Quarter the onion and half crush some garlic cloves, skin on.
  5. Place the lamb, sweet potato chips, onion and garlic in to a roasting tray, sprinkle with olive oil.
  6. Roast in the oven for approx. 35 minutes, depending on the size of your meat.
  7. Lightly boil the broccoli to serve.

Roast Mediterranean Chicken

WHAT YOU’LL NEED

Whole good quality chicken | Red capsicum (1/2 pp) | Baby Zucchini (approx. 2pp) | Hot Harissa powder | Tzatziki

WHAT TO DO

  1. Pre heat your oven to 180 degrees Celsius.
  2. Mix hot Harissa powder and salt with olive oil, rub all over the chicken.
  3. Cut the capsicum into large strips, halve the zucchinis, toss in olive oil, salt and pepper.
  4. Place the chicken in a roasting tray and cook for approx. 20 minutes, before adding the capsicum and zucchini and roasting for a further 20-25 minutes depending on the size of the chicken and veg.
  5. Serve with tzatziki.
