When it comes to birthday cakes, does it really get any better than a classic ice cream cake?
We think not! So we’re super excited to share this super simple, but oh-so-delicious recipe with you.

WHAT YOU’LL NEED
1L tub vanilla ice cream | 1L tub chocolate ice cream | 1L tub strawberry ice cream | 50g Maltesers, crushed | 50g marshmallows, chopped | 50g clinkers, crushed | sprinkles | mixing bowl | spatula | 20cm spring-form tin
WHAT TO DO
- Place chocolate ice cream in a large mixing bowl and allow to soften. Add marshmallows and combine
- Spoon mixture into cake tin, cover and pop in freezer for about 10 minutes or until fairly firm
- Repeat this same process with vanilla ice cream and Maltesers, and strawberry ice cream and clinkers, then cover entire cake and allow to freeze completely for at least 4 hours
Use your favourite flavour combinations of ice cream and confectionary – You don’t have to stick to the ones we’ve chosen! We also think it could be fun to decorate the cake with a drizzle of cold chocolate sauce. Also note that when serving the cake, it melts very quickly so you’ll need to work fast!
