WHAT YOU’LL NEED

Pre bought double layered chocolate sponge | 200g butter, softened | 2 cups icing sugar | 1/3 cup cocoa | 1 can cherries, pitted | dark chocolate nibs, melted | fresh figs and cherries

WHAT TO DO

  1. Whip butter, cocoa and icing sugar together to create a luxurious chocolate icing. Add water if it is a tad too thick
  2. Slather icing over your first layer of sponge, followed by ¾ of the tinned cherries – hand squished
  3. Place the other layer of sponge on top and ice generously with remaining frosting.
  4. Decorate! Slice your figs and arrange them on top of the cake along with the fresh cherries. Drizzle the melted dark chocolate haphazardly over the top and then ooze and squish the remaining cherries over the cake for a rustic look. Don’t be afraid of crimson splashed of cherry juice. Just embrace them, it will add to the flavour!
